An Italian Passion for tea

The company was set up in 1961 through the enterprising spirit of Alfredo Carrai. Alfredo was so fascinated by the world of tea that, despite his tender age, he decided to accept the challenge of introducing into Italy the consumption and culture of a drink that was practically unknown at the time. The desire to enhance his knowledge of the second most-widely drunk beverage in the world led him to perform numerous journeys in quest of the rarest teas and the finest harvests, without ever losing the awareness that there is always another tea waiting to be discovered and savoured. Alfredo’s first trips to China read like a daunting adventure story, beset with a thousand difficulties, in search of white teas or the precious teas of Yunnan, the first tricky negotiations with the plantations of Darjeeling, the emotion at the tasting of the first Gyokuro… And then there’s the satisfaction of opening up the true world of tea to the Italians, accustomed to the sporadic consumption of black tea in bags. From the first packages of the SNAKE label (later changed to SNAK), to the importation of tea in the packaging of the country of origin, through to the creation in the 80s of the brand La Via del Tè as a tribute to the Japanese tradition of the Cha-no-yu, which has its foundation in the Chado, that is “La via del tè”.

Sencha is the most drunk green tea in Japan, grown in sulight and harvested at 90% at the beginning of May. It is a tea rich in catechins (anti-oxidants compounds) and considered an healthy beverage. The name Sencha means literally "roasted tea", honouring the old Chinese green tea manufacturing tecniques, the inhibition of oxidation in tea leaves is done by steaming. In Japan, the first Sencha is called Shi-cha, NEW TEA, and it is highly prized by tea conosseurs.

Bai Hao Yin Zehn (literally white needles of silver tips) is the absolute treasure of Chinese tea specialities, once said to be manufactured only as an imperial tribute, harvested by young girls by cutting the white buds with golden scissors. Exclusively made of perfect young spring buds, still covered with white hair, only for one week in early spring. Rich in antioxidants compounds, caffeine but also L/Theanine: This highly refined tea comes traditionally from a cultivar of Camellia Sinensis called Big White, characterised by particurlarly beatiful and developed buds. The most drunk green tea in the world. The name comes from the tiny leaves rolled in the shape of pearls. The original Chinese name is in fact Zhu cha, Pearl tea, transformed in Gunpowder from the British merchants. Low caffeine content, with all the beneficial properties of green tea. Traditionally used in Morocco to prepare Ataay Naa Naa, hot green tea with fresh mint leaves, strongly sugared.

Famous Wu-Long tea ( the original Chinese name meaning Black dragon) , a special semi-oxidized tea coming from Fujian region. The manufacturing process is qwuite complex, involving many steps .It is oxidized at 20-30 % and it is one of the most drunk tea in Chinese, very well appreciated for the healthy properties as well as for the nice taste. It keeps an high content of EGCG epigallocatechingallat , the catechin of tea discovered acting as strong anti-oxidant . The large and mature leaves are first sun dried, then gently shaked in bamboo cilynders to broken only the leaf margins . Then a short oxidation time is required . The half-fermented tea is an intermediate category between green and black one and joins the qualities of flavour and taste of both categories.
