Pasta della linea dei grani turanici, viene prodotta con il grano Turanico proveniente da agricoltura BIO certificata. Questa specie è originaria della regione del Khorasan (Nord-est dell' Iran) ed è presente anche in Italia, ma in tempi moderni è stata dimenticata. Dal 2013 la nostra azienda, in collaborazione con l'Azienda Prometeo di Urbina e all'agronoma Oriana Porfiri, ha iniziato a mettere a punto metodologie e strumenti di pastificazione per interpretare al meglio la ricchezza di questi grani, riscoperti e coltivati proprio da Prometeo.Utilizziamo trafile circolari in bronzo ed essicchiamo la pasta a temperature inferiori a 44°C impiegando per la pasta corta circa 20 ore e per la pasta lunga circa 40 ore. Il risultato che si ottiene  è una pasta dal colore della terra e dallo spiccato odore di grano. Gli spaghetti turanici sono lunghi 260mm ed hanno un diametro di 2,6 mm. Il tempo di cottura è di 8-10 minuti.

Our whole wheat pasta is produced with our own wheat grown in line with the guidelines of the Good Agricultural Practices. The milling process preserves every element of the wheat: germ, endosperm and bran. This allows to maintain unchanged all the nutritional and vitamin properties with a greater contribution in terms of fibre and mineral salts. We use circular bronze die plates and we dry pasta at temperatures lower than 44°C, taking about 40 hours. Our whole wheat spaghetti have a diameter of 2,2 mm and a length of 260 mm. Their cooking time is between 8 and 10 minutes.

We use circular bronze die plates and we dry pasta at temperatures lower than 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. Spaghettoni have a diameter of 2,6 mm and a length of 260 mm. Their cooking time is between 10 and 12 minutes.
