La nostra pasta viene prodotta con il grano duro coltivato direttamente dall'azienda. Gli unici ingredienti utilizzati sono la semola e l'acqua. Utilizziamo trafile circolari in bronzo ed essicchiamo la pasta a temperature inferiori a 44°C impiegando per la pasta corta circa 20 ore e per la pasta lunga circa 40 ore. I fusilli hanno un diametro di 12mm e sono lunghi 40mm. Il tempo di cottura è di 7-9 minuti.

Our whole wheat pasta is produced with our own wheat grown in line with the guidelines of the Good Agricultural Practices. The milling process preserves every element of the wheat: germ, endosperm and bran. This allows to maintain unchanged all the nutritional and vitamin properties with a greater contribution in terms of fibre and mineral salts. We use circular bronze die plates and we dry pasta at temperatures lower than 44°C, taking about 40 hours. Our whole wheat spaghetti have a diameter of 2,2 mm and a length of 260 mm. Their cooking time is between 8 and 10 minutes.

Spaghetti Turanici

Our Turanici line pasta is made from turanicum wheat (triticum turgidum subspecie turanicum, more commonly known as T. Turanicum) from certified organic agriculture. This type of wheat grows in the Khorasan region (northeastern Iran) and also in Italy, but nowadays it has been forgotten. Since 2013 our company collaborates with Prometeo, a company of Urbino, and Oriana Porfiri, an expert agronomist. We have begun to develop methodologies and pasta making tools to best interpret the treasure of this wheat, revaluated and cultivated by Prometeo. We use circular bronze die plates and we dry pasta at temperatures lower than 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. The result obtained by the union of this semolina and water is an earth colored pasta with a marked scent of wheat. Turanicum spaghetti are 260 mm long and 2,6 mm wide. Their cooking time is between 8 and 10 minutes.
